Sloppy "Richies"
Rich made these on a Friday night, and they were a great variation on the traditional Sloppy Joe. He used what we had around the kitchen, and defrosted some ground turkey (we always have that in the freezer, its lower fat than beef, but you can use beef if you wish). They were great and they are soon to be a Friday night tradition.
Ingredients:
1 lb. Ground Turkey

1 med. Onion, chopped

1-2 Tblsp Olive Oil

1 Celery Stalk, chopped

2 Tblsp Green Pepper, med chopped

2 Tblsp. Red Bell Pepper, med. chopped

1/2 cup Water

1 tsp fresh Thyme

2 Tblsp White Vinegar

1 Tblsp Worscestershire

1/4 cup Ketchup

2 Tblsp Barbecue Sauce

1/2 can (about 3 oz.) tomato paste

1/8 cup brown sugar (or to taste)

crusty bread or rolls

Directions:
Start to brown the onions and the turkey in the olive oil. Midway through cooking, add the celery & both peppers. Saute until vegetables start to soften and the turkey is no longer pink but cooked through. Then add all the rest of the ingredients, mixing constantly. Cook til desired consistancy. I like it thick. Serve with rolls and a salad.
