Strawberry Pie in Meringue Shell
This recipe was given to me by a very old friend that I used to work with back when I waited tables in college. This pie is excellent in the summer. It is very refreshing. You can try experimenting with peaches or raspberries with this same shell.
Ingredients:
6 Egg Whites

1/2 tsp. Cream of Tarter

2 cups Sugar

8 oz. Whipping Cream

2 Tblsp Confectioner's Sugar

1 pt. Fresh Strawberries, sliced

Directions:
Beat egg whites until frothy. Add cream of tartar to the eggs and continue until soft peaks form. Add sugar gradually, beating constantly until stiff peaks form. Spread into a 12 inch pie dish (or parchment lined baking sheet, building up the edge to form a rim). Bake the shell slowly at 270F for one hour. Turn off oven and let stand in closed oven until cool.

Meanwhile, whip cream with confectioners sugar in a bowl until stiff. Fold the strawberries in gently, and spoon into meringue shell. Chill until serving time.

Notes: If you use a baking sheet, you can do a rectangular shape, or any shape you wish. Also, like I said above, you can add or mix different fruits for the filling.
